Paul explores the lower reaches of the river Spey - Scotland’s third longest river, famous for its forests, whisky distilleries and salmon - as it flows north towards the coast. On the way Paul hears tales of loggers who floated timber down the river from the 17th century onwards. He then takes to the water in a canoe and discovers the rare and endangered freshwater mussels that were once harvested for their precious pearls, which adorn royal crowns. Sampling a dram of the original water of life, Paul reaches the mouth of the Spey where shipyards launched vessels to sail the seven seas. Finally, Paul meets the last salmon net fisherman on the river and learns how nets were used to catch the fish, which were then packed in ice and sent by rail to London.

Mark Bonnar narrates the first in a series revealing the hidden world of Galloway Forest, the country's largest afforested area. Join the amazing men and women who live and work in the place known as Scotland's 'Highlands in the Lowlands', where 600,000 tonnes of timber is produced every year. The Forestry Commission's recreation team, lead by Archie McNeillie, is tasked with rebuilding steps on a well-worn pathway at Fairy Knowe. The trouble is, the steps are up a 330-foot hill. Getting hunks of granite rock to the remote location is one problem and digging them in by hand is another - for labourer John 'Cool' Coughtrie at least. A team of specialist contractors from Wales arrive in Galloway Forest to harvest timber from the most inaccessible areas using a massive system of cables and winches called the skyline. Conservationists Bill and Christine have a very unusual occupation deep in the forest. They breed and hand-rear hyacinth macaws, the world's largest flying parrot. And on a remote peatbog the size of 32 football pitches, Graeme Little operates his own customised mulching machine in a conservation project to restore the natural habitat.

Rannoch Moor - around 50 square kilometres of not very much. But this soggy desert is the location that two brave travellers have chosen for their adventure. It's a place that has been referenced in many poems and stories over the years, a bleak and desolate place, dotted with lochans and bogs where lonely travellers perish in the nothingness. Film-maker Andrew O'Donnell and his pal Mark Taylor have made it their mission to cross Rannoch Moor in a Canadian canoe, via the waterways that link Loch Ba, Loch Laidon and onto Loch Rannoch. Their journey starts by the side of the road, dropped off by Andrew’s dad (or as he likes to be called, their 'technical coordinator'). The A82 - not a great place to start a boat journey, but is it really a canoe adventure if you don't spend most of your time carrying the canoe? This is the definition of an off-the-grid adventure, in the nicest possible way. There aren't many people living in this bare and boggy terrain. They hope to make it across this wild territory to Kinloch Rannoch in five days - what's the worst that could happen.

Autumn brings challenges and rewards for farmers across Scotland. In Inverkip, Rachel and Camy are one year into building their own farm, taking on a tenancy at Dunrod Farm and a big bank loan with the dream of one day owning 5,000 sheep. But a trip to market means higher prices scupper their best intentions. In Maybole in South Ayrshire, the Barclay family are getting to grips with their new business venture – buying store lambs to fatten up for the butcher. After John’s father died suddenly last year, he’s trying to make their fourth generation farm work for them. A half-term break means a leisurely family day out… to the sheep auction. And in Moray, Nikki, Ollie and their children team up to process a bumper harvest of apples into juice for the whole year. Later, they find out if one of their favourite buffalo is pregnant.

Actor Martin Compston and his pal Phil MacHugh are back in Bergen to experience the industry that made Norway its billions: oil and gas. They pull on their safety suits to undertake the offshore emergency training that keeps the workers safe out at sea. It’s a shock to the system when Phil is set adrift and plunged into cold water with only Martin on hand to save the day. Next, they learn to breathe underwater in a rolling helicopter drill, before learning the importance of teamwork as they work together to put out a powerful fire. With their time in the south west over, Martin and Phil drive northwards towards Voss, where they have their eye on an unusual spot of lunch. Smalahovetunet Farm has been in Voss since the 18th century and is now the only remaining supplier of that infamous Norwegian delicacy: smoked sheep’s head. Bellies less than full, and feeling a little squeamish, it’s time to get back on the road. The boys get their first glimpse of Norway’s epic fjord landscape with a final stop at Stegastein, overlooking Aurlandsfjord.
