Tom cooks up a feast to say thank you - a sherry chicken that uses the vinegar in a special cheffy way - before his journey then takes him to Cadiz, a place where avocados have become big business. As local producer Rafa shows him the work that is being done to help conserve water while growing this thirsty plant, Tom cooks crispy potatoes with chorizo and avocado crema after a hard day's work.
